in this forum people ask to do this as you say, but they've all got the same response, you can't do it. I believe it's related to a Java incompatibility between the products.
It used to be possible to install sametime 2.5 and QP 2.08 on the same machine, but it's no longer possible with the 3.0 versions.
The following is taken directly from page 50 of the Sametime Release Notes:
A Sametime server and a QuickPlace server cannot be installed on the same machine. A Domino server limitation prevents all Java class files required by both of these servers from loading when both Sametime and QuickPlace are installed on the same machine.
A Sametime server and the IBM Lotus Virtual Classroom also should not be installed on the same machine for this reason.
